1 tbsp extra virgin olive oil
1 large chicken breast, trimmed and sliced
1 mango, seeded skined and cut into chunks
3/4 avocado, halved stone removed and sliced
small handful rocket, torn up
small handful of basil and lemon balm, sliced finely
2 large lettuce leaves, torn up
1/4 red capsicum, seeded and sliced
1/2 tbsp extra virgin olive oil
1 tsp lemon juice
1 tbsp balsamic vinegar
Salt and pepper to taste
- Heat olive oil in a large skillet over medium-high heat. Add chicken and some salt and pepper, stir. Cook until golden and just cooked through and set aside.
- In a large bowl add rocket, lettuce, basil, lemon balm, capsicum and mango. Toss through with the lemon juice, extra olive oil, balsamic vinegar, salt and pepper, add chicken and toss again.
- Arrange salad on plates, adding the avocado slices. There will be left over juices in the bowl, drizzle this over the top of the salad.
