Chicken Mango and Avocado Salad...

Serves: 2
   1 tbsp extra virgin olive oil
   1 large chicken breast, trimmed and sliced
   1 mango, seeded skined and cut into chunks
   3/4 avocado, halved stone removed and sliced
   small handful rocket, torn up
   small handful of basil and lemon balm, sliced finely
   2 large lettuce leaves, torn up
   1/4 red capsicum, seeded and sliced
   1/2 tbsp extra virgin olive oil
   1 tsp lemon juice
   1 tbsp balsamic vinegar
   Salt and pepper to taste
  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and some salt and pepper, stir. Cook until golden and just cooked through and set aside.
  2. In a large bowl add rocket, lettuce, basil, lemon balm, capsicum and mango. Toss through with the lemon juice, extra olive oil, balsamic vinegar, salt and pepper, add chicken and toss again.
  3. Arrange salad on plates, adding the avocado slices. There will be left over juices in the bowl, drizzle this over the top of the salad.
