Chilli Chicken Wraps


Makes: 4-6, serves 2-3 people
Ingredients:
200g chicken breast cut into small chunks
1 tbsp chilli paste
2 tbsp sweet chilli sauce
½ a lemon juiced, some zest
Hand full chopped parsley
Pepper to taste
Packet of wraps (I use Mission tortilla wraps 85% fat  free, there will some wraps left over)
2 tomatoes cut in half and sliced
1 Lebanese cucumber cut in half and sliced
3-4 lettuce leaves ripped to size (your liking)
150g grated cheese
Sour cream to serve
Method:
1.      Heat oil in a medium non-stick frying pan over medium heat. Add chicken, toss with chilli paste, sweet chilli sauce, pepper, parsley, lemon juice and zest. Cook on medium heat, ready when meat it white and the ‘sauce’ as darkened in colour and is sticky.
2.      Heat wraps in microwave (20 seconds), make wraps to your liking = D   
(Note: you can add other things to the chicken while cooking if you like- garlic etc.)
