Carrot and Walnut Salad...

I made this as a take-a-long to a get together
dinner with friends and they loved it!!

Serves: 4
Ingredients: 
   500g carrots, peeled and coarsely grated 
   1 small red onion, thinly sliced
   50g walnut halves 
   50g sultanas 
   1 large handfull of flat italian parsley, ends chopped
   1 small handfull coriander leaves, chopped
Dressing: 
   Grated rind and juice of 1 small orange
   2 tbsp lemon juice
   1/4 cup extra virgin olive oil 
   1 garlic clove, finely chopped 
   25 g walnuts, roughly chopped
Method: 
  1. For dressing: place all ingredients in a processor and whiz until combined. 
  2. Place all salad ingredients in a dish and combine. 
  3. Drizzle over dressing and toss to combine.
