Zest and juice of 2 lemons, plus lemon wedges to serve
4 garlic cloves, diced
Large handfull rosemary leaves, roughly chopped
60ml extra virgin olive oil
4 chicken breast fillets, without skin
400g steamed green beans, to serve
- Combine lemon zest, juice of 1 lemon, 3 crushed garlic cloves, rosemary and 2 tablespoons oil in a bowl. Add chicken and toss to coat. Marinate over night /or for at least 40 minutes.
- Heat a frypan over medium heat. Cook chicken for 4-6 minutes each side until golden.
- Serve with steamed greens.
