Ingredients:
2 tbsp light macadamia oil
1 tbsp balsamic vinegar
1/3 cup flaked almonds
2 nectarines, seeded and sliced
2 large lettuce leaves, torn up
Large handful english spinach, torn up/ or baby spinach
Small handful basil, torn up
Small handful lemon balm, torn up
Small handful mint, torn up
Method:
- In a large bowl add nectarine, spinach, lettuce,basil, lemon balm, mint and half the almonds. Toss through with the oil and balsamic vinegar.
- Arrange salad in a serving bowl, or on plates and top with remaining almonds. There will be left over juices in the bowl, drizzle this over the top of the salad.
Serve.
